Thaw lobster tails for 20 to 25 minutes in cold water.
On the shell side, cut lobster tails lengthwise down the middle of the back. Butterfly and clean under cold water (remove the small vein if necessary).
CONVENTIONAL OVEN
Place butterflied lobster tails in a baking dish shell side down and brush meat with our shallot, garlic and white wine butter or other butter of your choice. Sprinkle with a little lemon juice and/or breadcrumbs if desired.
Preheat oven to 400°F. Bake on middle rack for 18 to 22 minutes depending
on size of tails and finish under broiler for 2 to 3 minutes. Brush meat
once or twice during baking with our shallot, garlic and white wine butter
or other butter of your choice, reserving some of the butter to serve as an
accompaniment.
BARBECUE
Preheat BBQ to medium. Place butterflied lobster tails shell side down and
grill for 10 minutes. Brush meat with our shallot, garlic and white wine
butter or other butter of your choice, turn and continue grilling for 5
minutes.
For maximum flavour, we recommend warming dinner plates before serving.
