Thaw lobster tails for 20 to 25 minutes in cold water.
GRILLED LOBSTER TAILS WITH GARLIC BUTTER
On the shell side, cut lobster tails lengthwise down middle of back. Butterfly and clean under cold water, removing the small vein if necessary. Place butterflied lobster tails in a baking dish (shell side down) and brush the meat with our shallot, garlic and white wine butter or other butter of your choice. Sprinkle with a little lemon juice and/or breadcrumbs if desired.
CONVENTIONAL OVEN:
Preheat oven to 400°F. Bake on middle rack for 15 to 20 minutes depending on size of tails and finish under broiler for 2 to 3 minutes. Brush the meat once or twice during baking with our shallot, garlic and white wine butter or other butter of your choice, reserving some of the butter to serve as an accompaniment.
BARBECUE:
Preheat BBQ to medium. Place butterflied lobster tails shell side down and grill for 5 to 10 minutes. Brush meat with our shallot, garlic and white wine butter or other butter of your choice, turn and continue grilling for 3 to 5 minutes.
For maximum flavour, we recommend warming dinner plates before serving.
