AAA Angus beef filet mignon surface-roasted in duck fat, 20g of duck foie gras, fresh mushroom duxelle, French shallots, white wine (sulphites), green onions, fresh garlic, pastry (wheat flour, butter, water, salt, wheat gluten, deactivated yeast, malted wheat flour), eggs, sea salt, black pepper.

Contains: milk, wheat, soy.

May contain: almonds, hazelnuts.

Sauce: Filtered water, red wine (sulphites), demi-glace (sulphites), unbleached white flour, butter, French shallots, Spanish onions, red wine vinegar, potato starch, fresh garlic, beef concentrate, raw sugar, black pepper, fine herbs.

Contains: milk, soy.



CONVENTIONAL OVEN

Preheat oven to 375°F. Remove frozen Wellington beef from packaging and place on a baking sheet or in an ovenproof dish. Bake on middle rack. Approximate cooking time depending on your oven: 30-35 minutes (rare), 35-40 minutes (medium), 40-45 minutes (well done). To brown the puff pastry, finish under broiler for 1 to 2 minutes. Let stand for approximately 3 minutes. Add sauce to plate before placing the Wellington beef on it or serve sauce separately. Do not pour the sauce over the Wellington beef.

For larger quantities, add a few minutes to the cooking time.

SAUCE

Remove frozen sauce from packaging. Heat in saucepan over low heat. Stir occasionally until smooth. For a thinner sauce, add a knob of butter and/or 1 tablespoon or more of water. For a thicker sauce, simmer longer. Whisk well. Ideally the sauce should not be too runny.
